Our Whole Wheat All-Purpose flour is somewhat flaky like our Pastry Flour and somewhat high-rising like our Bread Flour. There is a lightness to this flour because we separate the “whole” parts of the wheat and reduce them to a very fine texture, before combining them. This results in a close-grained food product perfect for bread, biscuits, cookies, and cake.
